How to Make Scallops Starter Recipe

This recipe serves two people and the scallops are great to work with. You just sear them for two minutes on each side in hot oil. That’s how easy it is to cook scallops! Before putting them in the pan make sure they are dry, otherwise the oil will explode.

What you will need:

4 boxes

4 slices of parma ham

3.5 oz (100 g) green vegetables

1.5 ounces (50 g) almond slivers

2 peaches (fresh or canned)

2 tablespoons dry sherry

1 tablespoon white sugar

2 tablespoons of peach juice or orange juice

6 tablespoons of extra-virgin olive oil

1 tablespoon sherry vinegar

1/4 teaspoon salt

How to:

Mix the sherry, sugar, peach juice or orange juice, olive oil, vinegar and salt together to make the dressing. Peel the peaches if you are using fresh ones, then slice them. Blanch the greens in boiling water for half a minute, then drain well.

Cut the parma ham into small pieces. Heat a little oil in a frying pan. Season the scallops, then sear them for a few minutes without moving them. When they are caramelized and golden brown on the bottom, turn them over and give them a few minutes on the other side.

Transfer the scallops to a plate, then add the peach slices, parma ham, greens, almonds and dressing. Serve immediately while the scallops and greens are still hot.
